Baked Herb Lemon Chicken - Weekend Cooking

The boyfriend and I have been pigging out over our trips - and dragging ourselves to the gym is always difficult, so in line with trying to lose weight, we decided we shall try and eat healthy and of course trying different recipes are a must! 

I do have to admit that I play a very small role in the cooking. I am extremely lucky to have a boy that cooks very well, and I am happy to assist with the cleaning and that makes us very productive in the kitchen! 

Anyways, this weekend, we tried our hands at the Baked Herb and Lemon Chicken recipe we found online here. 



Visit the link for the full recipe, basically we did everything we were told to do, however we had skinless chicken breast which meant the colour post cooking didn't turn as brown as the recipe had intended. However, the recipe was a success, the chicken was moist, the flavor was strong, yet not overpowering and it was just delicious. I shall let the photos do the talking. We left out the Thyme on the recipe because we didn't have it on hand.

Bought a bottle of the cheapest wine :) 


Extra virgin olive oil, minced garlic, white wine, lemon zest, lemon juice and dried oregano.

Absolutely delicious- top plate belonged to the boyfriend who had it with some cheese risotto, and bottom plate belonged to me with sauteed mushrooms and bak-choy! 

Truly an enjoyable meal!
